A few weeks ago on the WAY Early Show, we made breakfast paninis on my panini maker. They were, of course, delicious! Today though, I made another delicious panini that is great for a quick, easy lunch and thought I'd share my recipe. And no, I'm not being compensated by the companies I mention below for their products - I just wanted to share how I best make them.
Pepperoni Pizz-ini
What you need:
Robusto! Ragu Sweet Italian Sausage and Cheese Sauce
Ecci Panis Ciabatta Rolls
Bridgford Sliced Pepperoni
Shredded Mozarella Cheese
How you make it:
- Preheat your panini maker
- Slice through the ciabatta roll horizontally, so you have a top and a bottom.
- On the top inside half, spoon on a couple of spoonfuls of the sauce making sure to cover the whole inside top. Don't put on soooo much sauce that it's going to leak all over the place while grilling.
- On the bottom inside half, sprinkle the cheese. Once again, make sure you cover the whole bottom half - you don't want to see much roll through here.
- Put on top of the cheese 6 - 8 slices of pepperoni (depending on your preference). If using some other larger bread, more pepperoni may be required. Just make sure you cover the area with as much pepperoni as you'd want as if it were a slice of pizza.
- Combine the two rolls back into a sandwich with the sauce side now touching the pepperoni and cheese side.
- Place on panini maker for approximately 4-5 minutes (heating times may very based on the panini maker). Give it long enough for the cheese to have melted and for the roll to be slightly grilled.
- Remove sandwich(es) from grill. Sliced in half diagonally.
- Eat and enjoy!
